Teagasc Food Research CentreAndre Brodkorb currently works in the Department of Food Chemistry and Technology, at the Teagasc Food Research Centre, Moorepark in Fermoy, Ireland. His main research interest is the study of structural and functional changes of food proteins, from source to processing, storage and delivery in the gastro-intestinal tract. This covers areas such as colloidal chemistry, protein chemistry, microencapsulation and food digestion (in vitro and in vivo).
